Easy Cookie Icebox Cake [recipe]

I made this "cake" 2 nights ago, and it was ah-mazing!  So simple, and requires very few ingredients: only 3!  It's a great cold airy summer treat!

Easy Cookie Icebox Cake
Ingredients:
  • 2 pgks chocolate sandwich cookies, or oreos
  • 2 tubs of whipped topping, we used fit & active from Aldi
  • 2 cups of milk, we used almond milk

You'll want to start by dipping the cookies into milk and layering them onto the bottom of a 9x13 baking dish.  Once you have your first layer, you'll top it with a full tub of whipped topping.  Then add another layer of cookies dipped into milk.

Some people do 3 layers with 3 of everything, we only did 2.  It was plenty!  At this point you'll add the second tub of whipped topping.  You can either drizzle chocolate syrup on it, or crumble up some cookies which is what I did.

Now it's the hardest part... You have to cover it and put it in the fridge and leave it alone for at minimum 6 hours!  Yes, that's hard to do!  My family was incredibly disappointed that they'd have to wait to eat it! ahah!

Here she is all plated up and looking decadent!  Don't worry, this was a tiny dessert plate =] 

Let me know if you try it!  The recipe called for regular milk && regular whipped topping.  Well I decided to try and help us out a little by using the "light" whipped topping, and I prefer almond milk for myself.  It was delicious!

  8. I've done this before, but haven't put chocolate syrup on it. It's already rich enough with just the cookies and whipped cream, for me anyways. lol

  14. t's so simple and so good! Make sure you chill it for at least four hours in the refrigerator so the cookies soften well that's what I do..
